New for 2009! Edible BC is excited to announce the opportunity to go behind the scenes with many of BC's top culinary artisans to learn the secrets of their crafts.
Due to the incredible success of Edible BC’s Chef for a Day last year, we have decided to expand on the concept and we have called on many of the province’s top food and wine artisans to help us.
Have you ever wondered what it would be like to be a professional baker? What about a master chocolatier? Wanted to try your hand at roasting coffee beans and pulling the perfect shot of espresso? How about brewing craft beer or spending a day in the vineyard or a top winery? Want to see how the province’s top mixologists shake things up? What about learning how brie is made? Or where your favourite charcuterie comes from?
Edible British Columbia has partnered with this province’s top food and beverage talent to bring you our brand new Behind the Scenes program which will be launching in the 2009! If are considering a culinary career, a vinous vacation or a weekend of learning a new skill, we can make it happen.
In these very personalized half and full day programs, you will learn the tricks of the trade from a professional working in the industry. The classes are small (maximum 2 participants) so you receive one-on-one time with your industry expert, and are able to experience first hand what a day in his or her shoes is like.
We have industry professionals across BC, ready and able to take you aboard. We will be working to add more culinary professionals to our list of experiences so be sure to keep an eye on our site, or call us for more details and customize an experience just for you.

Dates for classes will have to be mutually agreed upon between the booking party and the industry specialist.
A sample Behind the Scenes itinerary with Master Chocolatier & Pastry Chef Thomas Haas8 am: Meet Thomas at his North Vancouver factory and headquarters to enjoy breakfast with freshly baked croissants and other vinnoiserie, cappuccino, tea or hot chocolate
9 am: Brief introduction on the company and history, along with a tour of the facility
10 am: Chocolate from the bean to the bar
11 am: Chocolate tasting workshop
12 noon: Put your new found knowledge to use with a chocolate making lesson
1 pm: Lunch in the cafe
2 pm: More hands on time with the making of a small chocolate centerpiece to take home
3 pm: The secrets of making, and baking, a perfect croissant
5 pm: Coffee and cake and reflect on the day. Thomas will provide you with a take home breakfast for the next day as well as chocolates to remember your chocolate adventure!
A sample Behind the Scenes itinerary with Clarke & Nancy Gourlay of Little Qualicum CheeseworksBright & early: Enjoy muffins and coffee and get an introduction to the day of cheesemaking ahead.
After waking up: Set up and hands-on instruction with Nancy in all the tasks of cheese making, including renneting, cutting, moulding, brining and ripening room management. The type of cheese you make is dependant upon your preferences.
Once you get the hang of it: Try your hand at washing up and packaging.
Lunchtime: Gourmet grilled cheese sandwiches of course! Along with the Gourlay’s own wine.
Mid-afternoon: Enjoy a general tour of the farm and winery.
And an extra treat: Try your hand at milking the animals!
To take away: The Gourlays and staff will provide you with a gift basket featuring whatever cheese you crafted that day.
